
I love Korea in the summer. My favorite part might just be the food. Boiling soups that somehow cool me down, icy bowls of noodles that fill me up, crispy fried pajeon with a side of makgeolli in the rain, and of course, patbingsu in every flavor under the sun. Whether youโre here for the first time or just looking for your next dish to try, here are a few of my summer go-tos: ๐ Samgyetang (์ผ๊ณํ) โ A whole young chicken stuffed with sticky rice, ginseng, jujube, and garlic, served piping hot. Koreans swear by eating hot food in hot weather to restore stamina. ๐ฅถ Naengmyeon (๋๋ฉด) โ Chewy buckwheat noodles in an icy beef or dongchimi (radish water kimchi) broth, topped with cucumber, pear, and boiled egg. So refreshing on a humid day. ๐ฅ Kongguksu (์ฝฉ๊ตญ์) โ Cold wheat noodles in a creamy, chilled soybean broth. Mild, nutty, and incredibly coolingโperfect for the hottest days. ๐ฝ Oksusu (์ฅ์์) โ Sweet corn on the cob, often steamed or grilled, as an Ohioan, I canโt get enough in the summer. ๐ฅ Pajeon (ํ์ ) โ A crispy scallion pancake, sometimes loaded with seafood. Pair it with makgeolli (fermented rice wine) for the ultimate rainy day tradition. ๐ง Patbingsu (ํฅ๋น์) โ Shaved ice topped with sweet red beans, condensed milk, fruits, or creative toppings like cheesecake and matcha.
