
If you like hidden places and spaces, then you must try to find Confier if you can. In an office building, you go down an escalator to look around and when your eyes land on an unassuming all black door, you wonder... is this really where Iโm supposed to be? I was invited to try their spring menu and it was a fabulous experience. With a decadent seasonal menu that tells a cultural story from start to finish, itโs an experience. Standouts for me were the: - First Appetizer: A foamy dish of cauliflower, tomato, celeriac, melon, and tofu that was light and airy but so harmonious. - Second Appetizer: A rich dish with clam, broccolini, and water dropwort, that I opted to top with caviar. It was salty, full of umami, and I could have lapped up that sauce if there was more. - Cleanser: This was quite the surprise in a little glass. Pine needles, persimmon vinegar, and lemon really did awaken my senses so I was ready for so much more. - Semi-main: The harmony of flatfish, sweet pumpkin, sage, coriander seeds, parsley, and quinoa was my favorite dish of the evening. It was just so balanced perfectly between texture and taste. I wished there was more. - Dessert: First of all, it looked amazing.
